- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 cup crushed pineapple
- 1/2 cup pineapple juice
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 2–3 tbsp pineapple juice
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 325°F and grease a loaf or bundt pan.
- Beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each.
- Combine flour, baking powder, and salt in a separate bowl.
- Gradually mix dry ingredients into the batter.
- Stir in crushed pineapple, pineapple juice, and vanilla.
- Pour batter into pan and bake for 70–80 minutes.
- Cool the cake, then remove from pan.
- Mix glaze ingredients until smooth.
- Drizzle glaze over cooled cake and serve.
