- 4 salmon fillets (about 6 oz / 170 g each)
- 3 tbsp white miso paste
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1 tbsp sake
- 2 tbsp brown sugar
- 1 tsp grated fresh ginger
- 1 clove garlic
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- Optional sesame seeds and green onions
Instructions
- Mix miso paste, mirin, soy sauce, sake, brown sugar, ginger, garlic, sesame oil, and rice vinegar in a bowl.
- Coat salmon fillets with the marinade and refrigerate for at least 30 minutes.
- Preheat oven to 400°F (200°C).
- Place salmon on a lined baking sheet skin-side down.
- Bake for 10–12 minutes until the salmon flakes easily.
- Broil for 2–3 minutes to caramelize the top.
- Garnish and serve immediately.
