Ingredients

Scale
  • 4 salmon fillets (about 6 oz / 170 g each)
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tbsp sake
  • 2 tbsp brown sugar
  • 1 tsp grated fresh ginger
  • 1 clove garlic
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar

 

  • Optional sesame seeds and green onions

Instructions

  • Mix miso paste, mirin, soy sauce, sake, brown sugar, ginger, garlic, sesame oil, and rice vinegar in a bowl.
  • Coat salmon fillets with the marinade and refrigerate for at least 30 minutes.
  • Preheat oven to 400°F (200°C).
  • Place salmon on a lined baking sheet skin-side down.
  • Bake for 10–12 minutes until the salmon flakes easily.
  • Broil for 2–3 minutes to caramelize the top.
