- 1 cup hazelnuts or almonds, finely ground
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3.5 oz dark chocolate, chopped
Instructions
- Grind the nuts until finely textured.
- Mix ground nuts, flour, sugar, and salt in a bowl.
- Add butter and vanilla, then combine into a dough.
- Chill the dough for 30 minutes.
- Roll into small balls and place on a lined baking sheet.
- Bake at 325°F for 12–15 minutes until lightly golden underneath.
- Cool completely on a rack.
- Melt chocolate until smooth.
- Sandwich cookies together with melted chocolate.
- Let the chocolate set before serving.
