Ingredients

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup raspberries

 

  • 3/4 cup white chocolate chips

Instructions

  1. Preheat oven to 375°F and prepare a muffin tin with liners.
  2. Whisk flour, sugar, baking powder, baking soda, salt, and lemon zest.
  3. In another bowl, mix lemon juice, milk, butter, eggs, and vanilla.
  4. Combine wet and dry ingredients gently without overmixing.
  5. Fold in raspberries and white chocolate chips.
  6. Fill muffin cups nearly full with batter.
  7. Bake for 18 to 22 minutes until golden and set.
  8. Cool slightly before serving.
